Spices derive from seeds, fruits, roots or barks and have been used for thousands of years in religious rituals, medicine, cosmetics and perfume production. Like spices, herbs – which are leaves, flowers or stems – are also used for flavoring dishes. Certain spices and herbs create ideal harmonies with wines. This happens when the same dominant aromatic compounds are found in both the spice and wine, creating a satisfying balance by amplifying compatible fragrances and flavors. This so-called congruent pairing is the theoretical basis for matching wine with spices.
